The original Vincotto is produced in Lizzanello in Salento by the Calogiuri family since 1825 from a traditional recipe kept secret and closely guarded by the producer for over 500 years. According to the great International Chefs, Vincotto is an elixir, a velvety condiment, with subtle and harmonious aromas of spices, grapes and plums. Original Vincotto ® is often compared to traditional balsamic but Chefs say that Vincotto is much more versatile.
Vincotto has in itself the sweetness, the aromas, the most ancient vines. The original Vincotto is obtained from two different grape varieties: "Negroamaro" and "Malvasia Nera". The grapes are dried on the vine for 30 days and then on wooden trellises. The must is then gently boiled for over 24 hours until it is reduced to a fifth of the initial volume. The product thus obtained, very dense, is poured into small oak barrels together with the mother acetaia and aged in these barrels for over four years. All this allows the taste to develop its every perfume. Furthermore, Vincotto, being a natural product, does not contain dyes or preservatives.
