Grapes: 80% Negroamaro, 20% Malvasia Nera. Yield per hectare: 90 quintals of grapes.
Training system: sapling and spurred cordon.
Planting density: 4500-5000 plants per hectare.
Vinification: after the destemming of the grapes, the must remains in maceration with the skins for 12-18 hours at a temperature of 8-10 ° C. Follows the extraction of the must and the subsequent alcoholic fermentation at controlled temperature (16-17 ° C).
Color: bright pink with purple reflections.
Bouquet: intense and delicate with hints of raspberries.
Palate: soft, savory.
Serving temperature: 8-10 ° C.
Pairings: excellent throughout the meal, it goes well with first courses with tomato sauce, white meats, fish soups and skewered prawns.
