Vinification: the grapes harvested in the coolest hours of the day are destemmed and softly pressed. The must obtained is cooled to 10 ° C to facilitate static settling. After decanting, the selected yeasts are added for the start of fermentation which takes place at a temperature below 16 ° C.
Color: straw yellow with greenish reflections.
Bouquet: delicate, sapid, light fruity vein with hints of green apple.
Palate: dry, fresh, savory, with good persistence.
Serving temperature: 8-10 ° C.
Pairings: excellent with raw seafood, shellfish and fish dishes, both roasted and stewed.
