WHAT ARE AROMATIZED OILS

Who has never found a bottle of aromatized oil in the kitchen pantry? Maybe bought on vacation as a souvenir or given as a gift by relatives or friends who have returned from a business trip. Having it in the kitchen, however, have we ever wondered how to use this aromatized oil?

Precisely this condiment can be the turning point for our dishes, even those that may seem simpler or more practical because we prepare them every day.
By adding a little aromatized oil to the dishes, we will enhance them and enhance the tastes with originality, making some particular aromas seasonal only linked to a certain period of the year.

We can say that the aromatized oil is a new product for the Italian market and is already expanding rapidly, even if its consumption is not comparable to that of other European countries where, even, it is preferred to pure extra virgin olive oil. to season dishes.

Until a few decades ago, it was possible to find almost exclusively an oil aromatized with the essence of hot pepper on the market, a product that has always been part of the Italian gastronomic tradition and is still at the top of the preference rankings of Mediterranean consumers.

For some time now, a large number of aromatized oils from the most varied Mediterranean essences have been added to it, be they aromatic herbs or citrus fruits, lemon, rosemary, fennel or basil, etc., the offer is so wide. to allow us to always characterize our dishes at the table in a different way.

In Puglia and in particular in Salento, the aromatization of extra virgin olive oils has now become part of the local gastronomic tradition. Taking a holiday in Salento there is no shortage of small packs of 100 or 250 ml of aromatized oils in the shops and points of sale of typical Apulian products.

HOW A AROMATIZED OIL IS MADE

The basis of each aromatized oil is an oil that is often cold-pressed extra virgin olive oil or seed oil. To it is added the natural aroma, represented by the fruit or the vegetable shoot whose essence is contained or use natural extracts of the essence that is added to the oil and which serves to bring the aromatic character. This last method is the most requested and allows to have more satisfactory results, without contamination with unnecessary and / or unpleasant substances present in the fruit or in the vegetable shoot.
